E120 Le carmin (cochenille) vient d'insectes séchés. Sur les emballages US, on lit souvent carmine, cochineal extract ou Natural Red 4, pas E120.

Que signifient les trois niveaux?
Toujours animal: la forme commerciale habituelle vient d'animaux. Parfois animal: des voies végétales, microbiennes, synthétiques ou animales existent. Végétal ou minéral: la forme alimentaire habituelle n'est pas animale, pour clarifier les confusions.
Pourquoi les codes INS et les noms US?
Les numéros E sont surtout une convention d'emballage UE. Les codes INS du Codex et les noms courants aux États-Unis aident en voyage ou pour les produits importés.
Une correspondance prouve-t-elle une origine animale?
Non. Le vérificateur ne surligne que des noms de notre répertoire. Au niveau intermédiaire, l'origine dépend du fabricant. Demandez à la marque ou cherchez une mention végétale claire.
D'où viennent les données?
Chaque entrée cite des sources comme les règles d'additifs UE, le Codex INS, la pratique d'étiquetage FDA et la taxonomie d'ingrédients Open Food Facts (ODbL). Chaque entrée a une date.
